Responsibilities:
Responsible for identifying, executing and communicating the strategic direction of all activities within the Concession Operations in Joe Louis & Cobo Arenas.

  • Establish operational goals, budgets and strategic plans and monitor achievement of performance and profit objectives
  • Identify business opportunities, trends and risk through analyzing sales performance and gathering market place information
  • Maximize revenues and control costs of concession operation
  • Establish and develop relationships with major vendors and negotiate pricing and terms
  • Ensure all inventory management procedures are documented and enforced
  • Develop and enforce standards for service, product and food quality
  • Ensure all cash handling procedures are documented and enforced
  • Ensure the Collective Bargaining Agreement between Olympia Entertainment and HERE Local 24 is enforced and all documentation is completed on a timely basis
  • Develop, implement and enforce all company and departmental policies and procedures
  • Ensure compliance with established food handling and sanitation requirements and standards

Qualifications:

  • Bachelor’s degree or equivalent
  • Minimum 10 years in the food & beverage industry with a minimum 5 years in a supervisory capacity
  • Possess the highest integrity and ethical standards
  • Strategic planning skills are required to assist in the development of a vision for the company and an ability to implement a plan to achieve that vision
  • Highly organized, self-directed business style, with strong ability to prioritize
  • Knowledge of cash handling procedures and controls
  • Outstanding interpersonal skills are required in order to manage a large and diverse staff
  • Demonstrated staff development skills in order to properly train and develop staff to met objectives
  • Demonstrated project management skills with coordinating efforts among various departments and staff levels
  • Ability to analyze procedures to ensure effectiveness and effect
  • Advanced knowledge of computer hardware and software
  • Knowledge of the sports and entertainment industry, preferred.

Food Service Manager
The Winter Club of Lake Forest, Illinois

The Winter Club of Lake Forest, Illinois is seeking a Food Service Manager to conduct its program offerings in quick service operations, program based food services and special event catering.  Founded in 1902, The Winter Club is a members-only institution that provides recreational and social opportunities with a primary focus on the needs of children.  This year round operation offers ice hockey, skating, swimming and racquet sports, as well as summer day camp and a certified pre-school.

Operations include a seasonal snack shop, special event catering, social catering and programs in support of the camp and school operations.  Candidates must have three plus years experience and an outstanding record of achievement in food production, customer service and supervisory responsibility.  Competency in P & L management, recruiting, training, food and equipment safety, food production, inventory control and basic food service recordkeeping is required.  Experience in a private club environment, with demonstrated success in member satisfaction is highly desired.
